Ingredients
- 1 ½ tbsp. Olive oil
- 1 tbsp. Balsamic vinegar
- 2 tsp. Chopped shallot
- ¼ tsp. Salt
- ¼ tsp. Ground pepper
- 6 cups baby Spinach
- 1 cup sliced strawberries
- ¼ cup feta cheese
- ¼ cup walnuts, toasted and chopped
Directions:
- In a large bowl, whisk together oil, vinegar, shallot, salt and pepper and let it stand for about 5 to 10 minutes until shallots soften.
- Add spinach, strawberries, feta and walnuts.
- Coat salad with the dressing.
