  • 1 ½ tbsp. Olive oil
  • 1 tbsp. Balsamic vinegar 
  • 2 tsp. Chopped shallot
  • ¼ tsp. Salt
  • ¼ tsp. Ground pepper
  • 6 cups baby Spinach
  • 1 cup sliced strawberries
  • ¼ cup feta cheese
  • ¼ cup walnuts, toasted and chopped


  • In a large bowl, whisk together oil, vinegar, shallot, salt and pepper and let it stand for about 5 to 10 minutes until shallots soften. 
  • Add spinach, strawberries, feta and walnuts. 
  • Coat salad with the dressing.
